Pool & Private Plunge Pools
Poolside at Capella Pedregal, the edges of the infinity pool flow out into the horizon of the Pacific Ocean, creating a seemingly endless field of glistening water. The pool’s chaise lounges, cantera stone designed tables, cactus pots, and pool menu is combined with the sound of the crashing waves to create a relaxing ambiance. Upon arrival you are greeted by a personal pool server with amenity water, a facial spray and a woven fan for ladies. Chaise Lounges are pre set with two towels and an umbrella for enjoying the morning sun.
As the day goes by, your private pool servers will adjust your umbrella’s settings to provide as much shade or sun as you desire. Throughout the day, pool servers offer various refreshing amenities including beverages and cuisine finished with an evening tequila beverage. Sip frozen margaritas or rose champagne at the Capella pool’s plush, chaise lounges. From the freshest ceviche to lobster tacos, the poolside menu at Capella is limited only by your imagination.
Each of our bedrooms and suites at Capella Pedregal offers a private terrace featuring a plunge pool with spectacular views of the Pacific Ocean. The Beach Casita Suite features an in-ground infinity plunge pool with a warming fire pit that can be directly accessed from your bedroom or bathroom. Library
Each guest is invited to enjoy the Capella Library, away from the bar and other public areas of the hotel. Choose from a range of traditional parlor games, board games and recreational books. Tea, coffee, and a selection of fruit, juices and cordials are also available throughout the day with our compliments. The Capella Library will be staffed from 7 am to 11 pm every day to offer guests the individual care that is the hallmark of Capella Pedregal. The Capella Library is open 24 hours a day.

El FARALLÓN
El Farallón is a Los Cabos restaurant tucked into the cliffs of Capella Pedregal that resembles a coastal seafood shop that has survived its share of storms.
The restaurant is stocked daily with bounty from local fishermen. ‘Farallon’ in Spanish means ‘a rock that comes out of the ocean.’ El Farallon is situated Cliffside over the Pacific Ocean, where the local catch rests on mounds of shaved ice. Beside it, an old fashion scale weighs each catch, and the selection of the day is handwritten with chalk onto a blackboard. Various selections from the day’s catch are displayed on ice in El Farallón’s market-style fish display, or “La Panga,” accompanied by local experts available to answer your questions and assist in your decision.
After making your selection, your seafood is weighted and bagged and sent directly to the chef to be prepared on an open char grill. As your meal cooks, the grill spreads the charred aroma and the pungent flavor of freshly ground chilies.
El Farallón invites guests to gather with friends to enjoy Cabo San Lucas fine dining and savor pitchers of Sangria or Capella Margaritas in a casual atmosphere accentuated by the evening sunset above crashing ocean waves.
DON MANUEL’S
Don Manuel’s, the Signature Restaurant at Capella Pedregal serves breakfast, lunch and dinner in an inviting atmosphere reminiscent of Mexico’s old world. The cuisine at Don Manuel’s is accompanied by a design that will give you a sense of place in an authentic Mexican Hacienda.
Guests are greeted by the restaurant’s custom Mexican linens, unique hand painted china made in Guadalajara and granite tables. Don Manuel’s cuisine is based on local, organic produce grown specifically for the restaurant and prepared using old world techniques in a modern setting.
A truly unique aspect of this Signature Restaurant at Capella Pedregal is its kitchen, “Su Cocina.” In the same spirit of an authentic Mexican kitchen, the doors of “Su Cocina” are always open to Don Manuel’s guests. From the hand painted tiles that decorate the vaulted ceiling to Chefs grinding the corn to make each tortilla, “Su Cocina” resembles a real Hacienda style kitchen in both design and atmosphere.
In the morning “Su Cocina” is transformed into a breakfast buffet representative of a Mexican market. The breakfast buffet features Mexican glass jars filled with freshly squeezed juices, breakfast pastries from the wood burning oven and a daily selection of specialties cooked to order.
Around noon “Su Cocina” is used to teach the traditional techniques and heritage of Mexican cuisine, complete with offerings of tequila and wine.
For dinner “Su Cocina” sets the stage as guests are invited into the kitchen for “Antojitos,” or small plates, before beginning their meal. A favorite place to meet and enjoy a cocktail, guests often gather together in “Su Cocina” before sitting down for dinner.
Guests can choose to experience Don Manuel’s private dining room, a private booth, the patio overlooking the Pacific Ocean or a romantic dinner on the beach for two.
BEACH CLUB
The Beach Club offers all day dining serving casual fare from 11AM to 6PM daily. Set with panoramic views of the Pacific Ocean and Pedregal Mountain, the Beach Club’s hand woven leather bar stools, embroidered curtains, stone and wood tables and Mexican handmade china and glassware gives this restaurant in Cabos San Lucas a rustic and artisan feel.
Choose to dine inside on the terrace under the pergola and escape the sun, or outdoors while watching the crashing of the waves. This casual and familial restaurant invites guests to experience coastal cuisine, highlighted by flavors and fruits locally grown and raised on the Peninsula.
The crescent shaped bar in the Beach Club is a perfect gathering spot to enjoy a light snack before dinner or watch an exciting sporting event. Capella Margaritas, Pedregal Mojitos and Baja Brewery Micro Brews are just a few of the signature cocktails offered at the Beach Club bar.
Crudo
At the center of the pool bar overlooking the Pacific Ocean is Capella Pedregal’s latest addition, Crudo. A perfect spot for a quick afternoon snack, a light evening meal or watching the sunset.
The word ’crudo’ is Spanish for ‘raw’ and refers to the innovative and refreshing method of slicing fish thinly, then drizzling it with oil and seasonings. By integrating fresh, local seafood, Crudo will offer ceviche and a selection of sashimi style dishes and sushi rolls.
Crudo is open from 4 p.m. till 9 p.m. A sample of the menu includes Crudo Rolls consisting of asparagus, avocado, cucumber and shashimi and Chilean Salmon Crudo with pickled cucumber and charred lemon mayo.
